VAV systems, as opposed to Variable Volume and Temperature (VVT) systems, are cooling-only systems, designed to provide continuous cooling throughout the day. VAV systems work by controlling the volume of air supplied to different zones based on demand, unlike VVT systems, which adjust both volume and temperature based on a majority vote system in each zone. 

VAV systems provide effective zone control for cooling in large buildings, with features like variable fan speed, airflow regulation, and heating capabilities for perimeter zones. However, proper design, control, and maintenance are essential to ensure the system functions efficiently and occupants remain comfortable. 

The video also touches on the importance of selecting appropriate diffusers for VAV systems. Low-end diffusers can cause cold air to be dumped directly onto occupants, creating discomfort. VAV diffusers are designed to ensure proper air mixing, even at reduced airflow rates, preventing cold air from being concentrated in one spot.
