N.Y. Hospital Adds Brick Pizza Oven To Energize Retail Cafeteria

North Shore University Hospital (NSUH) in Manhasset, N.Y., has added a brick pizza oven to energize its retail cafeteria, according to Food Management.
The NSUH oven pizzas are a way to take some of the stress off staff. So far, they are the only ones to taste the pizzas - the cafe is still closed to visitors. The Marra Forni Brick Oven debuted just after the coronavirus crisis began.
A recent Food Management survey showed that 45 percent of healthcare operators are “cautiously optimistic; expect our operation to come through this stronger than ever.” The largest group, 55 percent of healthcare operators, are “worried, but fairly confident our operation will get through this in one piece.”
The NSUH oven sits in a station in the hospital’s cafeteria that previously had been open space.
Ways to provide pizzas to patients and for catering are currently being discussed.
